Pumpkin Spice Muffins

While I may be sick of pumpkin pie, I’m definitely not sick of pumpkin yet! I whipped up some pumpkin spice muffins with the leftover pumpkin purée to make the perfect snack for this week! 

2 cups of pure pumpkin

3/4 cup almond flour

1/2 cup coconut flour

1 tablespoon pumpkin pie seasoning

Dash of cinnamon to taste

1 teaspoon of baking powder & soda

1/4 cup egg whites

1/4 cup pure maple syrup

1 tbsp vanilla extract 
Mix together the dry ingredients and then add in the pumpkin & egg whites. Bake in the oven at 350 for 15-20 minutes.
Once the muffins have cooled down, add some coconut whip cream 🎃
You could also add some nuts, chocolate chips, cream cheese, etc to these muffins!  

DIY Taco Bowl

If you don’t participate in Taco Tuesday, you are seriously missing out.

It is one of my favourite dinner’s every week since it is so easy to make and there are a ton of different ways to do “taco tuesday”.

Today I am going to share with you one of my all time favs- DIY Taco Bowl!  I always strive to have at least one big as* salad every day and this is probably one of my favs!

Things I am Loving Friday- September 16, 2016

Hey guys!  I hope you all had a great week!

One of my favourite blog posts by Julie @ Peanut Butter Fingers is her “Things I am Loving Friday” posts so I thought that I would participate this week! It is an opportunity for me to share some of my favourite new finds that aren’t specific to just food!

So let’s get to it!

  1.  Made In Nature’s cinnamon toasted coconut flakes  – Since you all know how much I love food, you know that I HAVE to include one of my new favourite foodie finds!  I recently got my hands on some of Made In Nature’s cinnamon toasted coconut flakes and I am totally obsessed!  I had never tried toasted coconut flakes before since they are usually so high in sugar but I was super impressed when I found these ones by Made In Nature since they weren’t! The only problem?  They were gone within a couple of days😉

WIAW – September 14, 2016

Happy Wednesday guys!

Did you enjoy seeing one of my girlfriend’s meals/snacks last week?  I will try to get a couple more people to come on here & share!

I havent done a WIAW myself lately so I figured I would do a quick post this week!

Morning started out per usual- coffee blended with chocolate protein powder – workout – breakfast

Breakfast: one of my favs right now- DIY oat cereal… I eat this much on the daily!
