Protein Pancakes/Waffles


One of my favourite breakfasts to make is definitely pancakes or waffles.  There is something about them that I love to start my day with.  Since most packaged mixes are full of sugar and chemicals, I always make this homemade version to provide me with the best energy to start my day with.

One of the great things about this recipe is that you can double/triple this batch and store it in your fridge and just pop them in the toaster in the AM for a quick pancake breakfast.


– 1/2 cup of oatmeal

– 1/2 cup of egg whites

– 1/4 cup of cottage cheese

– dash of cinnamon and vanilla extract

Blend up all the ingredients and cook them on a frying pan or a waffle maker.  Flip/remove them once they get nice and crispy!


I love topping these with PB2 (or nut butter), berries, greek yogurt, chocolate chips, etc.  You can top them with whatever you crave 🙂
