Now that I am finally done midterms, I can take some time on Sunday’s to do one of my favourite things—> bake!
Whipped up some banana muffins for some easy snack options for the week.
2 ripe bananas
1.5 cups of oat flour
dash of cinnamon
1 tbsp vanilla extract
1 tbsp baking powder
2 scoops vanilla protein powder
1/4 cup plain Greek yogurt
3/4 cup unsweetened applesauce
1 egg + 1 egg white
Handful of chocolate chips (optional)
Preheat oven to 350
Mix all ingredients together and pour into 12 muffin tins
Cook for 20 minutes and check using a toothpick to see if they are done
