Chocolate Goji Berry Energy Bites

 

 

 

 

As promised, here is the recipe for Chocolate Goji Berry Energy Bites! 

Ingredients

3/4 cup of oatmeal

3/4 cup rice puffs

2 tbsp powered peanut butter

1 tbsp goji berries

1 tbsp chocolate chips

2 tbsp crunch peanut butter

1/4 cup unsweetened cashew or almond milk

More chocolate for melting

*Note- you could easily add 1-2 scoops of proteinpowder if you need more protein in your diet*
Directions

Mix together all of the dry ingredients in one bowl

Mix together the peanut butter & milk, and then pour evenly onto the dry ingredients.  Mix every together with your hands and then pop the mixture in the fridge

Take more dark chocolate (chips or bar) and melt in the microwave.  I melted it in 30 seconds increments

Take the mixture out of the fridge & roll into 8 balls.  Roll each ball into the melted chocolate and set on a piece of parchment paper.  Place the balls in the freezer for 30 minutes to firm them up

Store in a air tight container in the fridge &  enjoy 🙂
