Happy Wednesday friends!
I apologize in advance if my grammar/ spelling is off, it’s 5am and I am a little tired #accountantproblems.
I have started into busy season for work so on Sunday I prepped a bunch of food and most of my meals are being ate out of Tupperware. Yummm right?
Once I got ready for work, I whipped up a PB Oatmeal Smoothie Bowl with some granola on top. Call me crazy but it doesn’t bother me one bit that it is -10 out and I am eating a smoothie bowl 😉
Mid morning, I had some of my Cookie Dough Energy Balls (I swear these are the highlight of my day- if you haven’t made them yet, you NEED to!!)
For lunch I had a salad with quinoa, beets, parm cheese & chicken. Topped with balsamic dressing. All of this food was prep on Sunday so I literally just threw it all in a bowl this morning. (this recipe is coming, stay tuned :))
And since I got home from work and didn’t feel like cooking, I through together whatever I had already cooked in the fridge- chicken with hot sauce + sweet potatoes + roasted mixed veggies.
