I have been taking forever to get this recipe up on the blog and I am really sorry about it!!
As you can probably guess from a lot of my posts & WIAW, I always love having a big salad at least once a day.
I swear my body craves vegetables and a salad is a great way to get lots of them!
Whenever I hear people say they don’t like salads, I usually think it’s because they don’t actually know how to make a salad they like! Because seriously, nobody likes a salad with just vegetables & dressing!
One of my favourite salads currently is this Thai Peanut Salad!
For the salad:
3-4 oz chopped chicken breast
Chopped bell peppers
1-2 tbsp salted peanuts
Small handful of tortilla strips
For the dressing:
1 tbsp powdered peanut butter (can use regular PB too)
1/2 tbsp of soy sauce
Water to desired consistency (I usually add 1-2 tbsp)
You can also add in some honey if you like your dressings to be sweeter!
Mix all the salad dressing ingredients together and stir until it is all blended. If you are using regular PB, you might want to put it in the microwave for a couple seconds to melt it and then stir it all.
