What I Ate Wednesday – April 6, 2016

Happy hump day friends!  How is everyone’s week going?

My week has been rather interesting… If you know me, you know I am not really what you would call an animal person.  However, my boyfriend is in love with dogs and somehow convinced me to get one this week! So today is my first day as a dog owner!  I will admit, I am looking forward to take it on hikes and stuff on the weekends.

My day started off as usual with my coffee blended with a little bit of chocolate protein powder and then a workout!  My foot is still a little tender so I am trying to keep my workouts still low impact.


Breakfast after my workout was my favourite, as always (I know I am boring), a PB banana smoothie bowl.  However, I did top it with homemade granola which was awesome!  I will be posting this recipe tomorrow so stayed tuned!  It is delicious and so easy!


Mid morning I had some muesli topped with almond butter. I just LOVE how the almond butter melts from the hot oats! I also had a glass of kefir, which I have still been incorporating into my diet daily and am finding it is making a huge difference with my digestion!


By the time lunch came around, I was SUPER hungry!  Thankfully I was working from home and could just throw together whatever I had in my fridge!  This included a little bit of salmon, ground turkey, sweet potato & chopped raw veggies dipped in greek yogurt ranch dressing.


The night before I had made some chia seed pudding and it definitely made for the perfect afternoon snack!  This was about 1.5 tbsp of chia seeds, 3/4 cup of almond milk & a tbsp of vanilla protein powder (gives it a nice taste).  I topped this with some of Kashi’s crunch cereal & some unsweetened dried fruit!


After work, I put the ingredients in the bread machine to make homemade pizza and then I took my new dog for a walk to our local bakery/shop and grab some pizza sauce & toppings .  The funny thing is I am not actually a big pizza lover!  I will never order it when I go out but I do love a good homemade pizza! We have been having it quite often lately since my boyfriend LOVES pizza!


I topped my pizza with some chicken breasts, mushrooms, peppers, onions & cheese!  It sure was tasty!

  1. Ooooh I LOVE homemade pizza. I always buy dough/crust for convenience but I really want to start making it more. what recipe do you use?? Also I love the idea of having chia pudding as a snack. I really need to start making that for more than just breakfast!!

    1. Yes it is so easy! I make it in my bread maker (but you can just kneed it yourself it you don’t have one)
      Recipe is super easy:
      1 1/4 cup of water
      3 cups of whole wheat flour
      2 tsp of bread maker yeast
      2 tsp of vital wheat gluten
