2 Minute Individual Strawberry Shortcake


Happy Wednesday friends!

Instead of doing my typical WIAW post today, I REALLY wanted to share this recipe!  Now that berries are becoming super fresh around me, I just can’t get enough!

Last week, I was checking out Arman’s Healthy One Minute Brownie and kind of came up with this recipe from there!  If you are a big chocolate lover, you will have to try that recipe too!

Anyways, this recipe is great for an afternoon or late night snack and it only takes 2 minutes to make!

Ingredients:

1 tbsp of coconut flour
1 tbsp of almond flour (or coconut if you don’t have)
2 tbsp of PB powder
1/4 cup of liquid egg whites
1 tbsp of almond milk
1 tsp of baking powder

Directions:

  1. In a mug (a coffee/tea mug), mix all the dry ingredients together. Ensure there is no clumbs of flour!
  2. Add egg whites & almond milk and then stir until everything is well incorporated
  3. Place mug in the microwave for 1 minute. If necessary, (depending on the microwave) microwave again for 30 seconds.
  4. Let cool for 2-3 minutes and top with some strawberries, dark chocolate & coconut whip cream!

What I Ate Wednesday- May 18, 2016

I made a commitment to myself that this week I would get a WIAW post up so without fail, here I am!!

Morning started out as usual- coffee & workout! I have been doing a new workout program lately and have been LOVING it but man, it is making me hungry!

Therefore I have lots of food in today’s post 😉

Post workout/breakfast included my favourite-  PB Acai smoothie bowl with rawnola mixed in (dates & oatmeal) and topped it with PB puffins.  Have you ever tried these puffins? They are highly addictive..

What I Ate Wednesday- May 4, 2016

Happy Wednesday friends!  I missed out on last’s weeks WIAW post so I made sure I got it done this week!

Lately I have been finding that I have been really hungry during the day so I actually enjoy writing these posts because it gives me an idea of what I am eating & where I need to be adding more food.  Yes, I eat a lot of food, just ask the people I work with 😉

The day started off as usual- coffee & my workout.  If you follow me on snapchat (kwhitcroft), I posted my full workout on there yesterday.  It was killer!  By the time I was finished my workout, I had some serious hunger going!  I whipped up a chocolate sweet potato smoothie bowl & loaded it with lots of granola!
